Fresh Corn Relish
Ingredients:

5 cups fresh corn kernels
2 cups finely-chopped onion
1 cup chopped red pepper
1/2 cup chopped green pepper
1 tablespoon dry mustard
2 tablespoons celery seed
1 tablespoon salt -- plus
1 teaspoon salt
1 cup dark brown sugar
2 cups cider vinegar

Place all ingredients in a stainless steel or enameled saucepan (do not
use aluminum) and bring to a boil over high heat, stirring occasionally.
Reduce heat, cover partially and simmer 20 minutes.

Ladle into hot, sterilized jars to 1/8-inch of the top. Seal.

This recipe yields makes 4 pints, and it is best stored in the
refrigerator.
