| Le Prads' Onion Pickles |
Ingredients:

1 gallon boiling onions
1/2 cup salt
5 cups sugar
5 cups vinegar
2 teaspoons celery seed
2 teaspoons turmeric
1 teaspoon ground mustard
Soak onions (which have been chopped) in ice for 2 hours. Take 1/2 cup
salt and sprinkle among onions in ice water. Drain well.
Make syrup of sugar, vinegar, celery seed, turmeric and mustard. Let
syrup come to a boil. Add onions and let come to a boil. Pack in jars
and seal at once.
