Red Onion Marmalade
Ingredients:

2 large red onions -- thinly sliced
3 tablespoons brown sugar
3/4 cup dry red wine
3 tablespoons balsamic vinegar
Salt -- to taste
Freshly-ground black pepper -- to taste

Combine the onions and brown sugar in a saucepan. Cook over medium heat
for 20 to 30 minutes or until the onions begin to caramelize and turn
golden brown, stirring frequently.

Stir in the red wine and balsamic vinegar. Bring to a boil over
medium-high heat; reduce heat. Cook over low heat for 15 minutes or until
most of the liquid has been absorbed, stirring frequently. Season with
salt and pepper.

Chill, covered, in the refrigerator for up to 3 weeks. Serve at room
temperature.

This recipe yields 1 cup.
