Cucumber Relish II |
Ingredients:

5 quarts cucumbers -- chopped fine
5 onions -- chopped fine
6 bell peppers -- chopped fine
1/3 cup pickling salt
3 cups vinegar
5 cups sugar
1 teaspoon turmeric
1 teaspoon mustard seed
1 teaspoon celery seed
Combine cucumbers, onions, bell peppers and pickling salt; mix well. Let
stand 3 hours in ice; drain well.
Mix together vinegar, sugar, turmeric, mustard and celery seed. Bring to
a hard boil. Add cucumber mixture and heat again, almost to a boil; pour
into hot jars and seal.
