Onion Relish

Cooking Directions:

24 sweet red peppers (not the hot ones)
7 medium sweet onions (yellow or white)
3 cups sugar
3 cups vinegar
2 tablespoons salt
1 jalapeƱo pepper - (to 2) -- sliced finely

Slice peppers and onions; dump all ingrediants in a large pot; bring to
boil reduce heat simmer for about 30 minutes.

Pour into jars with 1/2-inch of headspace. Process in a water bath 15
minutes (half pints) 25 minutes for pints.

This recipe yields ?? servings.

Comments: Excellent on fried potatoes.
