Oven-Dried Tomatoes In Oil

Cooking Directions:

2 pounds cored ripe plum tomatoes -- halved lengthwise
1 teaspoon kosher salt
2 cups extra virgin olive oil
2 large fresh thyme sprigs
1 fresh rosemary sprig -- cut in half
2 fresh sage leaves - (to 3)
3 medium garlic cloves -- cut in half

Place the tomatoes on a baking sheet and sprinkle with the salt. Let rest
for 30 minutes. Preheat the oven to 250 degrees.

Pat the tomatoes dry and put them in the oven. Let them oven-dry for 5 to
6 hours, until they are dried but still slightly plump. They should not
be leathery.

Place the tomatoes in a jar or bowl with the olive oil, herbs and garlic.
Cover and refrigerate overnight and up to 2 weeks.
