Sweet Tomato Relish

3 3/4 pounds tomatoes -- chopped
2 1/2 cups white vinegar (5% acidity)
2 tablespoons pickling salt
1 cup brown sugar - (firmly packed)
1 cup chopped seeded jalapeƱo peppers
3 1/2 cups chopped green bell pepper
1 1/2 cups chopped onion

Combine all ingredients in a large nonaluminum Dutch oven; bring to a boil
over medium-high heat, stirring constantly. Reduce heat, and simmer 2
hours, stirring occasionally.

Pack relish into hot jars, filling to 1/2 inch from top. Remove air
bubbles; wipe jar rims. Cover at once with metal lids, and screw on

Process in boiling-water bath 15 minutes; serve at room temperature or
chilled with hot dogs, corn, peas, or greens.

This recipe yields 9 pints.
